Full Written recipe for Pav bhaji Prep time: 30-35 minutes Cooking time: 30-35 minutes Serves: 7-8 people Pav bhaji masala Ingredients: ● Coriander seeds 5 tbsp ● Cumin seeds 3 tbsp ● Cloves 20-22 nos. ● Star anise 4-5 nos. ● Black cardamom 5-6 nos. ● Cinnamon 3-4 sticks ● Bay leaf 4-5 nos. ● Kashmiri red chillies 20-25 nos. ● Fennel seeds 3 tbsp ● Kasuri methi 2 tbsp ● Turmeric powder ½ tsp ● Dry ginger powder ½ tsp ● Hing 1 tsp ● Kaala namak 1 tsp ● Aamchur powder 1 tbsp ● Salt 1 tbsp Pre prep Ingredients Red chilli paste: ● Kashmiri red chillies 15-20 nos. (deseeded & soaked) ● Water as required Garlic paste: ● Garlic cloves 3/4th cup ● Water as required Boiling veggies: ● Boiling water ● Phool gobhi 1 medium sized ● Hare matar 3/4th cup ● A pinch of haldi powder ● A pinch of salt Method: ● For red chilli paste, transfer the soaked kashmiri red chillies in a mixer grinder, add water as required & grind in a fine & runny paste. ● For garlic paste, transfer the garlic cloves in a mixer grinder, add water as required & grind in a fine & runny paste. The consistency should be watery. ● For boiling the vegetables, set water for boiling in a stock pot, add the veggies, haldi & salt, boil and cover until it turns soft & is cooked. Once its cooked strain the water & keep aside. Base bhaji Ingredients: ● Butter 50 gm + oil 2 tbsp ● Jeera seeds 2 tsp ● Onions 2-3 medium size (chopped) ● Capsicum 2 medium size (chopped) ● Potatoes 7-8 medium size (boiled & mashed) ● Tomatoes 7-8 medium size (chopped) ● Boiled green peas ● Boiled cauliflower florets ● Beetroot 1 medium size (boiled & grated) ● Fresh coriander a handful (chopped) ● Salt to taste ● Prepared pav bhaji masala 2 tbsp ● Kashmiri red chilli 1 tsp ● Dhaniya powder 1 tbsp ● Haldi powder ½ tsp ● Kasuri methi 1 tsp ● Green chilli paste (paste of 2 green chillies) ● Prepared garlic paste 7-8 tbsp ● Prepared red chilli paste 7-8 tbsp ● Hot water as required For tadka: ● Butter 50 grams ● A pinch of jeera seeds ● Prepared red chilli paste 4-5 tbsp ● Garlic paste/water 2-3 tbsp ● Pav bhaji masala 1 tsp ● A pinch of garam masala ● Salt to taste ● Freshly chopped coriander leaves ● Butter as per your preference ● Lemon juice 1 tsp Method: ● Set a big size tawa on medium high heat, add butter & oil, further add jeera & allow it to crackle, add onions and cook until they turn pinkish in colour. ● Further add capsicum and cook on high flame for 2-3 minutes. ● Further add the boiled & chopped veggies, salt, prepared pav bhaji masala, powdered spices & green chilli paste, mix it really well & try to break down the veggie chunks with the spatula. ● Further add prepared garlic and chilli paste, mix well and initially add 1-2 cups of hot water, now use a pav bhaji masher and start to mash the bhaji really well, keep the flame low and mash until the bhaji is almost crushed. ● You can adjust the consistency of the bhaji by adding additional hot water, i like the consistency of my pav bhaji to be little thin just like the street vendors do, you can adjust the consistency of the bhaji as per your preference. The whole process of cooking will take about 15-20 minutes. ● The base of the bhaji is ready, let the bhaji simmer on low flame by the time you can make the tadka that needs to go on the bhaji. ● For tadka, set a pan on medium heat, add butter, jeera, prepared red chilli paste & garlic paste, pav bhaji masala and garam masala, cook on medium high flame for 1-2 minutes, further add the tadka into the bhaji & mix well. ● Check for the seasoning and adjust the salt as per taste. ● Further add freshly chopped coriander leaves, butter and lemon juice, mix well and cook on medium heat for 2-3 minutes, your bhaji is ready to be serve with nice soft buttery pav. Now mash everything properly with a masher and set aside. For Tempering In a large tava or a shallow pan heat butter, oil then add onion and saute until translucent. Now add tomatoes, green chillies, ginger garlic paste, salt and saute until they are soft. Add fresh tomato puree and continue cooking for 6-8 minutes. Then add capsicum and continue cooking for another 2 minutes. Once done remove 2-3 tbsp masala aside for further use. Now, add degi red chilli powder, butter, pav bhaji masala and saute for a minute. Now, add boiled & mashed vegetables, butter, pav bhaji masala, water, sugar and continue cooking for another 2-3 minutes. Finish the pav bhaji with fresh coriander leaves and switch off the flames. Serve hot with toasted pav, onion, lemon wedges, coriander leaves. For Toasting Pav In a hot pan add butter degi red chilli powder and coat the pav in that inside out and toast it properly, set aside for further use. For Masala Pav In a hot pan add butter, prepared masala that was kept aside then coat the pav inside out properly and then toast it. Pressure cook till 4-5 whistles on medium flame and mash the veggies. Keep it aside. 4. Take unsalted butter in an iron tawa. Add oil and cumin seeds. Saute. 5. Add onions and saute on high flame until they are golden brown in colour. 6. Add green chilies and ginger garlic paste. Saute till the raw smell is gone. 7. Add tomatoes. Let them soften and add salt, red chili powder, turmeric powder and pav bhaji masala powder. 8. Mix well and add capsicum. Cook for 3 mins. 9. Add cooked and mashed veggies. Add 1/2 cup water and mix well. 10. Mash the bhaji again. Add salt or water if required. 11. Apply butter on a pan and place the pav buns on it. 12. Roast the pav buns on both sides. 13. Serve the street style Pav Bhaji piping hot with lemon, chopped onions, chopped coriander and butter. Give it 2-3 whistles, then release the pressure & take out the boiled Veggies in a bowl. Separate the Water into another bowl. Mash the Vegetables by using a masher & put the veggies water in it & mix well. For Bhaji, keep the Pav Bhaji Tawa on the flame, put Oil, Butter, Cumin Seeds, Finely chopped Green Chilli, Roasted Fenugreek Leaves, Kashmiri Red Chili Powder, Pav Bhaji Masala & saute them. Then put Ginger-Garlic Paste, Ground Tomato Paste & cook till the tomato releases Oil. After then put some Coriander Powder, Salt to taste, Crushed Red Chilli, Turmeric Powder & some Garam Masala, cooked and mashed vegetables & cook & mash it with the masher. Put some Lemon Juice, Boiled & Grated Potato, hot Water & cook well. Garnish it with some Coriander Leaves and put some more Butter on it. For Pav, keep the tawa for heating, put some Butter, Red Chilli Sauce, Coriander Leaves & roast the Pav/Bun properly. Serve the Pav Bhaji with finely chopped Onion & Lemon Slice. In this way, street-style Pav Bhaji/Tawa Pav Bhaji will get ready at home easily. Happy watching. :) #PavBhaji #StreetFood #ChefRanveer Pav Bhaji Preparation Time: 15 minutes Cooking Time: 35 minutes Serves: 4 Ingredients To boil vegetables 200 gms Cauliflower florets 1 cup Carrot, Peeled, cubes 1 capsicum, chopped 1 cup Green Peas Salt to taste For Bhaji 1 tbsp Oil 100 gms Butter (add gradually) 1 tsp Cumin Seeds 1 tbsp Ginger Garlic paste 2 Medium Onions, finely chopped 4 Large Tomatoes, finely chopped 3 Medium Potatoes, boiled & peeled 1 tbsp Kashmiri Red Chili powder 1 tsp Turmeric Powder 3 tbsp Pav Bhaji Masala Salt to taste 1 no lime juice 3 tbsp Fresh Coriander, chopped For Pav 2 tbsp Butter ½ tsp Pav Bhaji Masala 6-8 Pavs For Serving 1 Large Onion, finely chopped 1 Lemon, cut into quarters 1 tbsp Butter Process For Boiled Vegetables ●Add cauliflower, carrots, green peas and capsicum in pressure cooker. Now add water just to cover the vegetables. ●Give 5 whistles. ●Make sure vegetables gets mushy & porridge kind of texture. ●Add cooked potatoes and mash well. For Bhaji ● On a large tawa or kadhai heat oil and butter on medium flame. ● Add onions and saute for a minute. ● Add ginger garlic paste and saute till onion is golden in colour. ● Add in tomatoes and cook for 3-4 mins while stirring continuously. ● Add little amount of butter, mix well and cook for 3-4 minutes. ● Add potatoes and mash them along with boiled vegetables using a potato masher. ● Add kashmiri red chilli to the bhaji and mix well. ● Add water little by little for that perfect consistency. ● Add turmeric powder and mix well. Add some more butter and mix well. ● Add pav bhaji masala in two parts, half while cooking and half when the bhaji is cooked. ● Add the cooked and mashed vegetables and mix well. ● Add butter and salt, mix well. ● Add some more water and cook for 5-6 minutes. ● Finish with lime juice & chopped fresh coriander leaves. For Pav ● Heat a tbsp of butter and add little red chili powder on a tawa. ● Dab 2 pavs at a time and toast them as desired. Repeat till all the pavs are toasted. For Serving ● Portion out bhaji on plate and put a dollop of butter on top. Place onion and lemon on side. ● Garnish with fresh coriander and serve along with pav. NOTE You can cook potatoes along with the other vegetables to instead of cooking separately. You can reduce the quantity of butter as per your preference.

Ingredients: • 3 big Potatoes • 1/2 cup Cauliflower florets • 1 finely chopped Capsicum • 1/2 cup Green peas • 2~3 tsp grated Beet root • Water • Butter • Finely chopped Onion • Finely chopped Tomato • 1 tbsp Pav bhaji masala • 1 tsp Ginger-Garlic paste • Red chili powder • Salt to taste • Butter • Ladi pav Method: • In a cooker pot take potatoes and add water. • In another cooker pot take cauliflower, capsicum, green peas, grated beet and add water. • Beet root gives nice color to bhaji and also helps to make bhaji healthy. • Transfer both the pots into cooker, close the lid and cook on medium heat until 3 whistles. • Take the pots out of the cooker. • Mash the veggies well with masher. • Peel the potatoes and grate into the mashed veggies. • You can mash the potatoes too. • Mix grated potatoes well with mashed veggies. • Heat up butter in a pan. • Add onion and fry until it gets nice golden color for about 7-8 minutes on medium heat. • Add tomato, pav bhaji masala, ginger-garlic paste, red chili powder and mix well. • Cook until tomatoes cook nice and soft for about 4-5 minutes. • When masala begins to release oil add cooked veggies and water to adjust the consistency. • Add salt to taste and mix well. • Simmer the bahji on medium heat for about 8-10 minutes. Try not to cover it. • Add a little butter and pav bhaji is all ready. • Heat up another pan on medium heat and add butter. • Open the ladi pav and transfer it on the pan. • Roast the pav well in butter from both sides. • You can spread some masala or a little bhaji on pav while roasting if you want. • While serving pav bhaji serve with roasted pav, finely chopped onion, finely chopped coriander leaves and a slice of lemon. • Add a little butter in the bhaji if you want. Mumbai Pav Bhaji & Secret Pav Bhaji Masala I मुंबई पाव भाजी & पाव भाजी मसाला I Pankaj Bhadouria Sharing the recipe of an Epic Pav Bhaji Masala and of course, the most delicious Mumbai style Pav Bhaji as well! A good dish requires the right combination of spices. The Pav Bhaji Masala that I have shared with you helps you to create the absolute street style bhaji at home easily. Also I have shared some very important tips and tricks to make the Pav Bhaji experience authentic Mumbai experience. Also we shall not be using any artificial colours yet the Pav Bhaji will turn out to be as bright red and delicious as the Mumbai Pav Bhaji! Ingredients: 3 tbsp coriander seeds 1 tbsp cumin seeds 8 whole kashmiri red chillies 1/2 tbsp turmeric powder 1 tbsp dry raw mango powder 1 black cardamom 1 tbsp cloves 2" piece of cinnamon 2 star anise 1 tsp fennel seeds 1tsp dry ginger powder 1tbsp peppercorns 1/4 tsp asafetida Method: Dry roast the coriander seeds, cumin seeds, fennel seeds, pepper corns till lightly fragrant. Add the cinnamon stick, black cardamom and red chillies. Roast till lightly coloured and fragrant. Cool and grind to a fine powder with all the other ingredients. Store in an airtight container. Pav Bhaji Preparation time: 20 minutes Cooking time: 20 minutes Serves: 4 Ingredients: 5 medium potatoes, boiled 1 cup tomatoes, finely chopped 1 cup onions, finely chopped ½ beet root, boiled 1 green capsicum 1 cup cauliflower florets ¼ cup carrots ¼ cup beans ¼ cup green peas, shelled ¼ cup garlic 10 kashmiri whole red chillies 2 tbsp oil 2 green chillies 3tbsp pav bhaji masala Salt to taste 50g butter 1 bunch fresh coriander leaves 12 Pavs Method: The Masala: Gently roast the cumin, coriander, fennel seeds, the dry red chilies, cloves and cinnamon over low heat till lightly coloured and fragrant. Remove from fire immediately and cool. Grind all the ingredients to a fine powder and store in an air tight container till required. For the Pav Bhaji: Deseed the Kashmiri red chillies and soak in 1 cup boiling hot water. Grind the garlic with ½ cup water to make garlic water. Boil the potatoes. Peel and mash the potatoes. Finely chop the onions, tomatoes, green chilies and capsicum. Cut the cauliflower into florets and blanch with salt and turmeric powder. Blanch the peas, carrots and the beans. Drain and mash coarsely. Heat oil and half the butter in a pan and add chopped onions. Sauté till the onions are light golden in colour. Add the pav bhaji masala and the chopped capsicum and saute for a minute. Add the tomatoes, salt and cook on medium heat stirring continuously till oil separates from the masala. Add mashed vegetables, potatoes and 2 tbsp red chilli paste and one and half cups water. Bring it to a boil and simmer for around 15 minutes, mashing well till all vegetables are completely mashed. Add 2-3 tbsp of garlic water and cook for a 3-4 minutes. Heat 1 tbsp butter in a thick-bottomed pan or a tawa. Add 1 tbsp chili paste and mix well. Once the chili leaves colour in the butter, add 3 ladles full of pav bhaji and mix well. Cook for 2-3 minutes. Slice pav horizontally into two and liberally apply butter on the cut side. Cook on the tawa for half a minute, pressing two or three times or till pav is crisp and light brown. Cover it with a lid and cook for 2 to 3 whistles. Once the vegetables are cooked well. Mash the vegetables with the help of a masher and keep it aside for further use. For Tempering In a shallow pan, add butter, oil, once it's hot, add onions and saute well. Add ginger garlic paste and saute, add degi red chili powder and saute well. Add tomato, salt to taste and cook it for 1-2 minutes on moderate heat. Add green chili, pav bhaji masala and saute it. Add prepared boiled vegetables and mix well. Add pav bhaji masala, capsicum, tomato and mix it well. Once pav bhaji is cooked well, add butter and stir. Add coriander leaves and cook it for 3-4 minutes on moderate heat. For Dough In a bowl or parat, add refined flour, oil, water as required and knead it well. Make a smooth semi soft dough, apply oil onto it and cover it with the muslin cloth. Let it rest for 10-15minutes. Divide the dough into small lemon size balls, make flat roti with the help of a rolling pin. Keep it aside for further use. For Roasting Roti In a flat pan, add oil, once it’s hot, place roti on it and roast upto 50% on both the sides. Transfer it to a plate and keep it for further use. For Salad In a bowl, add onion, green chillies, coriander leaves, lemon juice, salt to taste and mix everything well. Keep it aside for further use. For Assembling In a pan, add butter, once it’s melted, place roti and cook it on both sides. Transfer it onto a plate or platter. Place the prepared pav bhaji filling on the roti, add prepared salad, grated cheese, sprinkle pav bhaji masala and roll it. Serve it on a serving platter, garnish it with coriander sprig. Recipe in Urdu: Directions: -Frying pan mein badiyan ka phool,badi elaichi,laung,darchini,sabut lal mirch,sabut kali mirch,sabut dhania,zeera,saunf,jaifil aur javatri dal dein aur khushbu anay tak roast ker lein & thanda ker lein. -Spice mixer mein roasted spices dal dein aur ache tarhan grind ker lein. -Kala namak,haldee powder aur aamchor powder dal dein aur grind ker ka course powder tayyar ker lein.Pao bhaji spice mix tayyar hai! -Spice mixer mein lehsan,adark,Kashmiri lal mirch aur pani dal dein aur grind ker ka paste bana lein & side per rakh dein. -Pot mein phool ghobi,matar,shimla mirch,gajar,tamatar aur pai dal ker ache tarha mix karein aur ubal anay dein,dhak dein aur halki darmiyani ancch per 15-20 minutes kliya paka lein. -Aloo,namak,tayyar pao bhaji spice mix aur grinded chili paste dal dein aur ache tarhan masher ki madad sa mash ker lein. -Makhan dal ker dubara mash ker lein aur 5 minutes kliya paka lein aur bowl mein nikal ke side per rakh dein. -Us he pot mein cooking oil aur makhan dal ker melt ker lein. -Zeera aur pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein. -Baqi bacha huwa grinded chili paste dal ker ache tarhan mix karein. -Tayyar pao bhaji spice mix dal ker ache tarhan mix ker lein. -Cooked & mashed vegetables ko shamil karein aur ache tarhan mix ker lein. -Kasuri meethi aur lemon juice dal ker ache tarhan mix karein. -Makhan dal ker dhak dein aur 2-3 minutes kliya halki ancch per paka lein. -Pyaz,hari mirch,makhan aur lemon slices sa garnish ker ka serve karein.

This is a very popular Indian street food. Mashed vegetables cooked in spices. This tastes simply yummy. Let’s prepare pav bhaji. Ingredients: • 7 small Potatoes • 1 cup Finely chopped Green pepper • 1 cup Finely chopped Cauliflower • Frozen peas • 1/4 cup grated Carrot (Optional) • 1 tbsp Oil • 1 big finely chopped Onion • 2 small finely chopped Tomatoes • 1 tbsp Ginger garlic paste • 1 tbsp Pav bhaji masala • 1 tbsp Kashmiri Chili powder • Butter • 1/2 tsp Sugar • Salt to taste Method: • In a cooker jar take potatoes. In another jar take green pepper, cauliflower, green peas and carrot (Optional). • Add a bit water in potatoes and 1/2 glass water in the vegetables. • Take 1” water in pressure cooker. Put potato jar first and the vegetable jar into the cooker. • Close the lid and cook on medium heat until 2-3 whistles. • Heat oil in a pan. Add onion. Cook on medium heat for 7-8 minutes until onion turns nice pink. • Add tomatoes, ginger garlic paste, pav bhaji masala and kashmiri chili powder. Mix well. • Add 2 tbsp butter. Cook until tomatoes are cooked well. Add sugar. • Mash the boiled veggies. Peel the potatoes and grate them into mashed veggies. • You can mash the veggies and potatoes together. • Mix the mashed veggies and potato well. • Add the mashed veggies into the onion tomato masala. • Add salt and mix well. Add 1 tbsp butter. • Cover and cook on medium heat for 7-8 minutes. • Remove the lid and mix well. Pav bhaji is ready to serve. • Serve with buttered and roasted bread, finely chopped onion and coriander leaves.
